Helathy Chicken Piccata Recipe

If your new year's resolution is to eat healthier this year, this chicken piccata recipe will put you on the right track.  One main misconception about eating healthy is that you will be forced to give up your favorite foods.  While it isn't advisable to eat pizza and ice cream everyday, there are ways to prepare these dishes in a way that is both rich in flavor and nutrients.  

Traditional chicken piccata dredges the chicken breasts in flour and/or breadcrumbs and fries the meat until golden brown.  The fried chicken is then served on a bed of pasta tossed with a buttery lemon caper sauce.  This lighter version cuts out a significant amount of fat and saves eaters at least 200 calories.  The chicken breasts are sauteed as opposed to fried and paired with whole wheat spaghetti and mushrooms.  The quintessential sauce is made with olive oil instead of butter and combined with tons of lemon juice and capers.  One serving is less than 400 calories so you can feel good about this meal.

6 ounces whole-wheat angel hair pasta
1/3 cup all-purpose flour, divided
2 cups reduced-sodium chicken broth
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground pepper
4 chicken cutlets, (3/4-1 pound total), trimmed
3 teaspoons extra-virgin olive oil, divided
1 10-ounce package mushrooms, sliced
3 large cloves garlic, minced
1/2 cup white wine
2 tablespoons lemon juice
1/4 cup chopped fresh parsley
2 tablespoons capers, rinsed
2 teaspoons butter
