Question: Love Peanut Butter Cookies, but.....

Love Peanut Butter Cookies, but every time I make them they are flat and crunchy. The cookies from Fresh and Easy are the ones I like, but I cannot seem to achieve this is my kitchen. I love Peanut Butter cookies that has some height and are moist and chewy, does anyone have suggestions or a great recipes for this type of PB cookie?

Not my recipe- but try these. They're excellent. I personally lust after the delicate crisp ones from Dahlia Bakery (sigh), and would give my right arm for their recipe. Dahlia makes a delicate, crisp cookie stuffed with a peanut butter ganache that is to die for.
