Classic Maine Lobster Roll

One of the most iconic foods of the Northeast is the lobster roll.  It is a simple sub sandwich that is made by filling split top roll, usually a hot dog roll, with a mixture of fresh succulent lobster, mayonnaise, and finely chopped celery.  The simplicity of the roll is what makes it so great.  Maine lobster rolls are a great way to the luxury of lobster without the high price tag.  Enjoy a lobster roll this summer.

Maine Lobster Roll

Ingredients:

4 top-sliced hot-dog buns (or fashion your own top-sliced buns)

2 tablespoons unsalted butter softened

2 cups coarsely-chopped cooked lobster cool but not cold (from about (3) 1 1/4-lb lobsters)

⅔ cup mayonnaise

4 tablespoons  minced celery

Oh my god, that looks so good. My grandmother was a cook for a 4-star resort in Boothbay Harbor, ME and used to make these. It's been years since I've had one of these lobster delights! Thanks for the recipe. I'm on my way to the store... :)
