Question: Alchohol in recipes

My husband was recently diagnosed with hepatitis c. I would like information on what to substitute for wine, wine vinegars, and mirin in recipes. I am trying to get him to eat healthier and go vegetarian. I've purchased quite a few vegetarian cookbooks but there are recipes that include alcohol, Do all vinegars contain alcohol?

I know most vinegars contain traces of alcohol but when used in cooking, the exposure to high heat causes the alcohol content in vinegar to evaporate. If you don't want to use vinegar in salads or your vegetarian dishes. You can try using lime or lemons instead.
