The Anatomy of a Pancake [infographic]

Every country seems to have its own recipe for making the perfect pancake. The same few ingredients always exist -- milk, eggs and flour. However, some like to mix it up with a big of salt, butter or lard.

Americans, for example, use a combination of milks, eggs and self-raising flour with a bit of salt, baking powder and butter. The British like to keep things simple with milk, plain flour and eggs, with a small amount of butter and a tiny bit of salt.

The diagram for 'Britain' is actually just England (and perhaps Wales too, I'm unsure), as in Scotland pancakes are made with less milk, but with sugar:

I am from Canada and have never heard of anyone making pancakes with lard. Everyone I know makes it with butter.

I've lived my life between Quebec, NovaScotia and Ontario, and I've NEVER known anybody who made pancakes with lard in Canada. Teh source data is highly suspect for this presentation.

PS: I do however put blueberries and/or apples in my flapjacks ;-)
