Branzino is a fish from the Mediterranean, also called sea bass. It is typically a fairly small fish that feeds 1-2 people, because of this it is often prepared and served whole, with skin on. To make the skin appealing it is scaled and then the whole fish is cooked in a way that makes the skin crispy. Techniques to accomplish this include frying, grilling, and broiling.
