Summer is upon us and with that comes the inevitable swimsuit season. This year do not do extreme dieting but rather opt for healthy flavorful options such as these Mexican Chicken Lettuce Wraps. You don't have to feel guitly about the carbs because the lettuce takes the place of them. This recipe is more like a method. You can add whatever flavor combinations you like. Asian inspired lettuce wraps are nice. I like tucking some lemony ceviche between the lettuce leaves. This summer do not deprive yourself of delicious food, your body will thank you for it.
3 cups cubed chicken breast
1 tablespoon lime juice
1/2 teaspoon ground cumin
1/2 teaspoon ground chile powder
1/2 teaspoon seasoned salt
1/4 teaspoon garlic powder
3 tablespoons Olive oil
1 can (15 ounces) black beans, rinsed and drained
1 medium tomato, seeded and finely chopped
1/4 cup finely chopped onion
1/4 cup finely chopped sweet red pepper
1 medium ripe avocado, peeled and finely chopped
12 Bibb or Boston lettuce leaves
