I don't know the quantity of sherry your recipe calls for, but I know that if you are only talking a small amount sometimes you can use a little fresh orange juice and vanilla as a substitute. There are also recipes in which you can use apple cider vinegar as a substitute.
Another more simple substitute would be chicken broth; you would not be aiming to add another taste as you are with the sherry, but simply underscoring the taste of the chicken.

Substitute - General .
Raspberry extract, brandy extract

Substitute - Measured
2 tablespoons brandy, substitute the following: 1/2 to 1 teaspoon brandy extract OR 2 tablespoons water, white grape juice or apple juice

2 tablespoons sherry: 1 to 2 teaspoons vanilla extract or 2 tablespoons orange or pineapple juice.

To substitute sherry in a marinade: for 1/2 cup sherry use 1/4 cup vinegar + 1 tablespoon sugar + 1/4 water or 1 tablespoon vinegar, plus chicken stock or water to make 1/2 cup.

try sherry vinegar- or cook down the sherry to remove the alcohol.
FYI- cooking the sherry will remove the alcohol.

try vinegar to keep the spicy taste, orange juice or apple cider can be added if the recipe demand a sweet taste else you can easily do with chicken stock or broth if its just for wetting or giving curry
