Indian Pudding

Ingredients

4 cups milk
2/3 cup molasses
1/2 cup sugar
1/2 cup cornmeal
Salt to taste
Cinnamon to taste
Ginger to taste
4 tablespoons butter

Preparation

Heat 4 cups milk in double boiler; add molasses, sugar, cornmeal, spices and butter. Cook 20 minutes, then add fruit.

Pour into greased dish and bake 2 hours.

Add 1 cup more milk, cream or milk; and a little butter. Bake 1 hour longer.

If each day, you add 1 cup or less of cream and butter (add less liquid each day) and rebake a short time, on the 4th day it will be "licken' good". (An old New England recipe.)
