A calzone can be classified as a savory turnover. This tasty crescent filled dough can be stuffed with a number of different ingredients. Basically, anything that can go on a pizza can go into a calzone. This vegetable version was inspired by a calzone I ate several years ago at a local Italian joint. I especially love the goat cheese in this recipe because it adds a creamy element. This recipe does not include tomato sauce in the filling but feel free to add it to the filling. These calzones can be turned into an easy weeknight meal if you have the pizza dough already prepared.
Ingredients:
3 lrg red bell peppers
3 lrg yellow bell peppers
1 pound fresh spinach stemmed and rinsed well
1 teaspoon olive oil
1 medium garlic clove, minced
4 lrg thinly sliced portobello mushrooms
1 can artichoke hearts (drained and rinsed)
8 ounces goat cheese
1 pound fresh pizza dough
6 tablespoons jarred olive paste, (optional)
