Indian Mango Salad

Ingredients

1 small lrg ripe mango peeled and cut into dice
1 tablespoon vegetable or groundnut oil
1 small hot red chilli seeded and finely chopped
1 small piece of ginger peeled and grated
1 teaspoon black mustard seeds
grated zest of a lime
250 ml natural yoghurt

Preparation

Put the mango and any juice into a small bowl.

Warm the oil in a frying pan and cook the chilli ginger and mustard seeds until the seeds start to pop.

Add the lime zest and remove from the heat.

Stir gently into the chopped mango and set aside.

When cool mix with the yoghurt and season with salt.

Spicy indian cooking often benefits from a cooling fruit chutney on the side.

Serve also with almost any plainly grilled meat or fish
