Guinness Braised Short Rib Sliders

A Saint Patrick's Day dinner does not get any better than Guinness braised short rib sliders.  Short ribs are seared and then cooked low and slow on the grill while simmering in beer.  The meat falls apart and is incredibly tender.  The meat is served on top of soft potato buns with sharp white cheddar cheese.  You can serve this meal with roasted rosemary potato wedges or roasted cabbage wedges.  This is one Irish inspired meal you will never forget.

Guinness Braised Short Rib Sliders with Irish Cheddar Cheese
Recipe from Homemade Cravings and prepared by Mother's BBQ

Ingredients:

For Short Ribs:
4 Carrots, Peeled and Cut into 2 Inch Pieces (and their tops)
1 Large Onion, Halved and Sliced into 1/2 inch thick slices
2 Lbs Boneless Short Ribs Salt and Pepper
1 – 11.2 oz Bottle Guinness
20 Oz Beef Broth
1 Bay Leaf
3 tbsp. Flour
fresh thyme*
fresh rosemary*

To Assemble Sliders: 
2 T Butter, Softened (I used Kerrygold Salted Butter) 1
2 Small Sliced Potato Rolls
6 oz Kerrygold Aged Cheddar Cheese, Sliced

*Note: The rosemary and thyme are additions to the original recipe.  The sliders were originally prepared in the crock pot but the version in the video is prepared on the grill.
