Hi. My name is Leslie and I live in Rhode Island. I have my associates degree in baking and pastry arts from Johnson & Wales University. I received it over 11 years ago and have done just about nothing with it...career wise. The only things it comes in handy for are baking for my 5 year old daughter's school stuff (she'll have the best baked goods there... probably the most expensive too... so that I can make some of the $30,000 of my tuition back. lol) and baking for my cousin. She was diagnosed with celiac disease several years ago. Once in a while I try my hand at gluten-free recipes. She's told me about the products she's had to buy in the markets and they sound pretty awful. Supposedly the "breads" are heavy as bricks and fall apart when you eat them. They have to be frozen just to keep any small amount of moisture in them. She really appreciates the things I make. So far, they've turned out pretty good and always light and moist. She says they're the best she's had and that I should open a gluten-free bake shop. I don't know about that, I just find recipes on sites like this and follow them to a T, maybe tweaking them hear or there. It's great to make her happy and I LOVE seeing her enjoy them.
