Is there any Veggie Burger recipes without any eggs?

Good question... I've been wondering that myself. Now that you have asked on Foodista, a light bulb has gone off in my brain: try a vegetarian meatless loaf recipe, but make patties and fry them in olive oil.

For real vegan, use olive oil instead of butter. Go easy on the vegetable stock at first, and add it just until you get a good patty consistency. You could also try substituting cooked brown rice, rolled oats, or chopped cooked beans for the bread crumbs. Also, a little chopped cheese (or soy cheese) makes a good binder in a loaf or patty.

I like this recipe from UKTV. The biggest problem with no eggs is trying to bind the burgers together. I added some additional herbs- you may want to do it to taste as well. I had to do a little converting- but they were not bad!

For the burgers

6 tbsp olive oil
1 onion, sliced
1 stick celery
1 clove garlic, crushed
1 leek, finely sliced
1 14oz can kidney beans, drained and washed
1 cup cooked brown rice
1 bunch flat leaf parsley, chopped
black pepper
shredded carrots
(For the green onion oil)

1 bunch spring onions
1/2 cup olive oil
2 tbsp ginger juice.

Heat half the oil in a frying pan, and add the carrot, onion, celery, garlic and leek - fry gently until softened.

Add the kidney beans and rice and mash everything gently together.

Add the parsley and season with salt and freshly ground black pepper. Let cool then shape into patties.

Heat the remaining olive oil in a frying pan and fry the patties for 2-3 minutes on each side until hot & golden.

To make the green onion oil, quickly blanch spring onions in hot water and rinse in iced water.

Squeeze out the water from the spring onions, trim the ends& put them into a blender and add the olive oil.

Add the ginger juice, season with salt, and blend before straining through a fine sieve.

Place the patties on a plate or bun & dress as you like, top with shredded carrots, and drizzle with spring onion oil.

This is the best homemade vegan burger I have ever made. It is so simple it requires your veggies and a food processor. Please let me know how it turns out for you! @singerinkitchen

I have a recipe you can try. The main ingredient is tofu and the egg is optional. In fact, I rarely use the egg. Breadcrumbs are enough to bind it. Let me know what you think!

I watched an episode of Guys Big Bite this winter and I'm sure he made one without eggs..try wwwfoodnetwork.com and search for vegan burgers...he was making a recipe for his vegan sister and it looked very tasty..and I'm not even into being vegan :-D
