Place the ricotta in a cheesecloth that is inside a strainer or china cap suspended over a bowl. Cover loosely with plastic wrap and refrigerate overnight. Any extra liquid will strain through and collect in the bowl. Discard the liquid and continue with your recipe for the filling.
