Before eating, remove the seeds and the vein, these contain most of the heat in a jalapeno. You can cool down the heat with coconut milk or regular milk or dairy (sour cream or ricotta sometimes works) add some lemon juice , the acidity will help to cool them down as well.
When preparing a jalapeno, wear gloves, open the jalapeno and remove the seeds and veins(a spoon makes this easy) then soak the jalapeno in lightly salted water until ready to use. The longer they soak, the milder they will be.
