Ingredients

1 Onion, chopped
1/2 cup Chopped bell pepper
1 Clove garlic, chopped
1 teaspoon Oil
1/2 pound Ground beef
1 cup Corn
1 tablespoon Chili powder
1 cup Shredded cheese
2 Eggs
1 cup Milk
2/3 cup Basic baking mix (see recipe)
1/2 teaspoon Salt

Preparation

Saute onion, pepper and garlic in oil. Brown ground beef and add vegetables. Stir in corn and chili powder. Stir in cheese. Put into a casserole.

Combine eggs, milk, baking mix and salt in a blender. Pour over mixture in casserole. Bake at 400 degrees for 30 minutes.
