Chewy Oatmeal Cookies With Dark Chocolate Covered Cranberries

Ingredients

1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup brown sugar
grated zest of 1 orange
3 cups quick oats
1 bag of dark chocolate covered cranberries (I really like the ones made by Brookside)

Preparation

Preheat oven to 350° F.

Beat butter, sugar, brown sugar, eggs and orange zest in large bowl, until light and fluffy.

Combine flour, baking soda, salt, and cinnamon in a small bowl. Gradually beat flour mixture into butter mixture. Stir in oats and dark chocolate covered cranberries.

Roll into small balls and place on a parchment covered baking sheet. Bake for 10-12 minutes. Cool on baking sheets for 1 - 2 minutes; remove to wire racks to cool completely.
