The first step, and very important step, is to thaw and completely drain the chopped spinach squeezing the water out of the spinach using your hands. Put the spinach in a skillet and warm over low heat. Remove spinach.
Break eggs into a cup and add a little milk. Scramble eggs until well beaten. Pour into skillet. Add spinach and continue to scramble. Finally add cheese. Cook on low heat until eggs are done. Salt and pepper to taste.
