Baked Veal Scallopini

Ingredients

1/4 cup chopped onions
1/4 cup oil
1 1/2 pounds boned veal steak, cut in serving size pieces
1/4 cup sifted flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 (4 oz.) can button mushrooms, drained
1/2 teaspoon sugar
1 cup Chablis or other white dinner wine

Preparation

Saute onions in heated oil; remove to casserole. Roll veal in flour seasoned with salt and pepper; brown in oil. Add mushrooms and brown slightly. Arrange veal and mushrooms over onions.

Combine other ingredients; pour over meat. Cover; bake in moderate 350 degree oven for 1 1/4 hours or until veal is tender. Remove cover last 1/2 hour. Serve with baked potatoes, green peas, Perfection Salad and spumoni. 6 servings.
