pound boneless skinless chicken breasts in chunks |

cup long-grain rice uncooked |

teaspoon lemon zest grated |

cups chicken broth |

tablespoon fresh parsley snipped(for garnish) |

Step 1 |
Season chicken with salt, pepper & paprika. Brown chicken in oil in large nonstick skillet over high heat. Add remaining ingredients, except parsley;bringto a boil. Reduce heat, cover & simmer 20 to 25 minutes, or until rice is tender& liquid is absorbed. Fluff with a fork. Garnish with parsley. |
