Oatmeal Banana Bread

Ingredients

1 1/4 cups quick cooking oats
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup sugar
1 teaspoon vanilla
1 1/2 cups mashed ripe banana (about 3 med.)
3 tablespoons milk
1/4 cup chopped walnuts or pecans

Preparation

Stir together flour, oats, powder, salt and soda; set aside. Beat eggs; add sugar, oil and vanilla; mix well. Combine banana and milk. Add banana mixture to egg mixture alternately with dry ingredients. Stir in nuts. Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes. Remove from pan, cool completely on wire rack. Wrap and store overnight for easier slicing. Makes
