Savory Cheddar Bacon Herb Muffins

Ingredients

1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup fresh chopped herbs- your choice, basil, oregano or marjoram
1 tablespoon brown sugar
1 cup milk
1/2 stick of butter

Preparation

Preheat oven to 400 degrees

Line 12 muffin tins

Stir in herbs, cheese, sugar and bacon

Make well in the center

In another bowl, combine egg, milk and melted butter

Add wet ingredients to dry and mix gently

Mixture should be lumpy but moistened

Fill lined muffin tins about 2/3 full

Bake 15 to 20 minutes.

This is a fantastic breakfast muffin. I freeze each individually, for a quick breakfast when things get busy.
