Margarita Ceviche

Ingredients

8 large sea scallops
cup lime juice, divided + 1 lime wedge
2 tablespoons freshly squeezed orange juice
2 tablespoons olive oil
1 medium-size tomato, diced into 1/4-inch pieces
1 avocado, peeled, pitted and diced into 1/4-inch pieces
cup red onion, diced into ΒΌ-inch pieces
1 serrano chili, stemmed and minced
2 ounces tequila

Slice scallops into 1/6-inch thick slices. In a large bowl, add scallop slices and 1 cup limejuice. Toss thoroughly. Place bowl in fridge and "cook" scallops in limejuice for 3 hours.

Discard limejuice and reserve scallops.

In a medium-size bowl, make a vinaigrette with 2 tablespoons fresh limejuice, orange juice, olive oil and tequila. Add scallops, tomato, avocado, onion, cilantro and chili, and toss thoroughly In a small shallow bowl, place 4 tablespoons salt. Moisten the rims of 4 margarita glasses with the lime wedge. Dip the rim of the margarita glasses into the salt to rim the glass. Fill glasses with ceviche and serve immediately.
