Oat Bran Banana Muffins
Preheat oven to 400 degrees. Grease 8-10 muffin cups or line with paper liners. Combine oat bran, milk, and mash banana in mixing bowl; stir in bran until well moistened. Let stand 15 minutes. Add remaining ingredients and mix well. Spoon into muffin cups and bake until they are browned, 30-35 minutes or until tests done. Transfer to wire rack. Serve warm or at room temperature. I substitute 1/4 cup Egg Beaters for the 2 egg whites.
