Asian Pork Salad

Ingredients

For the Marinade:
1/4 cup Soy Sauce
1 tablespoon Sesame Oil
1 inch Piece of Ginger, Diced
1 clove Garlic, Minced
1/8 teaspoon Pepper
3/4 cup Orange Juice
1 pound Pork Cutlets
For the Dressing:
1/4 cup Orange Juice
1/4 cup Soy Sauce
1/2 teaspoon Powdered Ginger
1 tablespoon Sesame Oil
1 tablespoon Vinegar
For the Salad:
1 head Lettuce
4 ounces Snow Peas
1 Carrot, Shaved
1 cup Broccoli, Cut into Small Pieces
1 Red Pepper, Chopped
5 1/2 cups Chow Mein Noodles

Preparation

For the marinade, mix together all the ingredients with the exception of the pork.

Slice the pork into 1" strips and mix into the marinade, coating completely. Cover and place in fridge for 1 to 2 hours.

After marinating, cook up in a preheated wok set to medium high heat for 4 to 5 minutes or until cooked through.

For the dressing, mix together all the listed ingredients.

Assemble salad with desired toppings including pork, edamame, mandarin oranges, snow peas, carrots, broccoli, red pepper, and chow mein noodles.

Pour dressing over the top of the salad and serve.
