Alphabet Soup

Ingredients

8 cups chicken stock, or canned chicken broth
2 cloves of garlic, halved
2 onion, quartered
2 turnip, peeled, and, diced
3 lrg carrot, peeled, diced
3 cups tomato, juice
1 cup dried noodles
1 pch salt and pepper

Preparation

In a large stockpot over medium heat, bring stock, garlic and onions slowly to a simmer. Cook for 20 minutes to extract maximum flavour from garlic and onions. Strain the garlic and onions from the soup.

Add turnips, carrots and tomato juice to the stock and simmer at medium heat until vegetables are just tender.

Meanwhile, cook the alphabet noodles according to package directions, until al dente. Drain.

Add noodles to the stock and cook until heated through. Season with salt and pepper.

Serve immediately or ladle into individually labelled containers and freeze or refrigerate for lunches down the road.
