edit Ingredients

¼

pound diced salt pork, ham or smoked pork butt

1

med. onion

1

med. tomato

1

clove garlic, minced

1

tablespoon vegetable oil

1 ½

cups long grain rice

3

cups boiling water

Salt and pepper

edit Preparation

Step 1

Cook salt pork, onion, tomato and garlic in vegetable oil. Cover, medium heat, stirring frequently until onion is tender. Stir in rice, cook 5 minutes. Stir in boiling water.

Step 2

Reduce heat to low; simmer covered 10 minutes. Remove cover, cool stirring frequently until liquid is absorbed and rice is fluffy, 15 to 18 minutes. Season with salt and pepper. Makes 6 servings.
