Cook salt pork, onion, tomato and garlic in vegetable oil. Cover, medium heat, stirring frequently until onion is tender. Stir in rice, cook 5 minutes. Stir in boiling water.

Reduceheat to low; simmer covered 10 minutes. Remove cover, coolstirring frequently until liquid is absorbed and rice is fluffy, 15 to 18 minutes. Season with salt and pepper. Makes 6 servings.
