Recipe: Season Rice edit

pound diced salt pork, ham or smoked pork butt |

med. onion |

med. tomato |

clove garlic, minced |

tablespoon vegetable oil |
1 ½ |
cups long grain rice |
3 |
cups boiling water |

Step 1 |
Cook salt pork, onion, tomato and garlic in vegetable oil. Cover, medium heat, stirring frequently until onion is tender. Stir in rice, cook 5 minutes. Stir in boiling water. |
Step 2 |
Reduce heat to low; simmer covered 10 minutes. Remove cover, cool stirring frequently until liquid is absorbed and rice is fluffy, 15 to 18 minutes. Season with salt and pepper. Makes 6 servings. |
