Breakfast Taquitos

Ingredients

1/2 pound pork sausage
1 lg. potato
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder (or 1 clove fresh garlic)
1/2 white onion, diced
1/2 sm. bell pepper, diced
1 sm. tomato, diced
6 eggs, slightly beaten
16 ounces shredded cheddar cheese

Preparation

In large skillet, fry sausage and potatoes. Drain excess grease. Then add seasonings, onions, peppers and tomatoes. Cook until vegetables are tender, continually stirring mixture. Add eggs and cook until soft, but not dry. Warm tortillas either in a steamer or pan fry. Tortillas should be soft and workable. Fill tortillas with egg mixture and top with cheese and salsa or picante sauce (optional). Makes about 12 to 15 taquitos.
