eggs

cup canola oil

1

teaspoon vanilla

1

teaspoon butter extract

1

lemon cake mix without pudding (18.25 oz.)

1

box instant lemon pudding mix (3.4 oz.)

1

cup rice cereal

1 ¼

cups coconut

1

yellow cake mix w/o pudding (18.25 oz.)

½

cup whole poppy seeds

Step 1

Preheat oven to 350 degrees.

Step 2

Beat eggs, add oil and flavorings. Add lemon cake mix and lemon pudding. Beat at medium speed for one minute. Stir in cereal and coconut. Add yellow cake mix and poppy seeds and blend well. Roll into balls the size of a walnut and place on lightly greased cookie sheet. Bake at 350 degrees for 8 to 12 minutes, depending on desired crispness of the cookies.

Makes 8 to 12 dozen cookies.
