Paleo Banana & Blueberry Muffins

Ingredients

3 ripe bananas
1 cup blueberries
1 cup almond flour
1 cup coconut flour
1/4 cup honey/syrup
1/4 cup coconut oil
6 tbsp arrowroot powder
2 eggs
2 tsp vanilla bean paste
1/2 tsp baking powder
1/4 tsp salt
Handful almond flakes, to garnish

Preparation

Pre-heat the oven to 180c and fill a muffin tray with muffin cases.

Mix the dry ingredients together in a bowl.

In another bowl, mash up the ripe bananas with a potato masher before adding all the wet ingredients and mixing together well.

Combine the dry ingredients with the wet ingredients and just for a few minutes, continue to mix until all ingredients are well blended.

Fold in the blueberries (leaving out a handful to garnish afterwards), before pouring the mixture into the individual muffin cases.

Place the muffin tray into the oven for approximately 20 minutes or until a knife placed in the middle of one of the muffins comes out clear.

Garnish with the almond flakes and remaining blueberries and enjoy!
