Rosemary Olive Oil Bread

Ingredients

3/4 cup sugar
1/2 cup chopped walnuts (optional)
2 teaspoons baking powder
2 teaspoons dried rosemary
1/4 teaspoon salt
1 tablespoon grated lemon zest
2 eggs, lightly beaten

Preheat oven to 350 degrees F

Lightly coat one loaf pan with the non-stick cooking spray

In a bowl, combine the flour, sugar, walnuts, baking powder, rosemary, salt and lemon zest.

In a different, large bowl, blend the eggs, wine or apple juice and olive oil

Stir the dry ingredients into the egg mixture

Transfer the batter to the loaf pan and smooth the top surface of the batter

Bake for about 55 minutes, or until a skewer inserted into the center of the bread comes out clean.

This recipe makes a delicious, moist bread that is not too sweet, especially if you like the flavor of rosemary.

Try the bread topped with cream cheese or butter, although it's so tasty, you won't need a topping.
