Just down the road from my house, the trucks line the sides of the road as locals go clamming. This is harder than it sounds; as it is definitely still winter up here, no matter what the calendar says.
If you are not out there digging these little gems, you can still buy them by the peck, if you know a guy. Luckily, we do.
Check out this recipe for Garlic Baked Clams. These are a little more dressed up than the standard way to prepare them, but who doesn't love a little fancy with their meal? Enjoy!
24 littleneck clams (or Long Island oysters)
1 tablespoon grated Parmesan cheese
4 tablespoons light olive oil
1/2 cup bread crumbs
2 slc bacon
6 garlic cloves chopped
1/8 cup dry white wine
cup clam juice
