Our family loves this sort of salad served at room temperature, and scooped up with pita bread chips. Who can argue with all that flavor?
Fresh Tarragon and Lentil Salad
2 cups lentils, cooked and drained
2 cups carrot , diced
2 cups celery, diced
½ cup red onion, diced
1 cup kale, chopped
¼ cup tarragon, minced
¼ cup extra virgin olive oil
4 tablespoons red wine vinegar
1 clove garlic, minced
1 tablespoon honey
