Creamy Tomato Orzo Soup with Greek Yogurt and Basil

Winter soups are so comforting and warming, but it’s often hard to find fresh and seasonal ingredients that don’t get repetitive. That’s why we enjoy a soup recipe that uses canned or otherwise year-round ingredients, and transforms them into something totally delicious and fresh. This creamy tomato orzo soup from Two Peas and Their Pod uses canned diced tomatoes, vegetable broth and greek yogurt, with spices and herbs that make it a real treat to slurp on a cold day.

Creamy Tomato Orzo Soup

Ingredients:

1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
2 bay leaves
3-15 ounce cans diced tomatoes
1-15 ounce can vegetable broth
1 teaspoon brown sugar
1/4 cup chopped fresh basil
Dash of crushed red pepper flakes
Salt and freshly ground black pepper, to taste
1/2 cup plain Greek yogurt (like Chobani)
1 cup cooked Orzo pasta
