Tantalizing Tofu Coconut Curry with Peanut Butter and Noodles

For those people who say vegetarian cuisine is boring, I say you've never had tofu coconut curry with peanut butter and noodles from Amuse Your Bouche.  Even though the meat has been eliminated meat from this dish, other flavorful ingredients like fresh cilantro, red chili and coconut milk make this meal pop.

In a nutshell, firm tofu is pan fried to create a golden brown crust.  It's then bathed in a fragrant coconut broth with garlic, peanut butter, red chilies and cilantro.  Colorful hints of red and green from the red bell pepper, snow peas, and mushrooms can be seen peaking through the noodles.  One bite and you'll be hooked on this dish.  For a variation on this dish, substitute the noodles for brown rice and the tofu for chickpeas.  I like to throw in some green beans as well.  Also, for those with a peanut allergy, use cashew butter or almond butter instead of peanut butter.

Tofu coconut curry is the perfect example of how a vegetarian dish can be as flavorful and satisfying as its meaty counterpart.
