Holiday Baking: Paleo Caramel Apple Gingersnaps

Just because you are on a specialized diet, does not mean you can't get into the holiday baking spirit.  These paleo caramel apple ginigersnap cookies are a delicious treat that everyone can enjoy.  The cookie dough is formed using a combination of coconut flour and almond meal that is sweetened with molasses and coconut sugar.  Freshly ground cinnamon and ginger add pizzaz with the dried apples contribute another layer of texture.  The caramel sauce is the finishing touch that brings this whole cookie together.

Gingersnaps with Caramel Apple Sauce

For the Caramel Sauce:
1/2 cup coconut sugar
2 1/2 tablespoons grass-fed butter
1/4 cup full fat coconut milk

For the Cookies:
1/4 cup coconut oil, melted
1 cup coconut sugar, plus additional for rolling
1 large egg white
2 tablespoons molasses, plus 2 teaspoons 
1 1/2 cups finely ground almond meal, plus 1 tablespoon (5.4 ounces)
1/4 cup coconut flour, sifted, .08 ounces or 22 grams
1 3/4 teaspoons baking soda
1/2 teaspoon salt
1/2 tablespoon ground ginger
2 teaspoons cinnamon
1/2 cup dried apples, lightly packed and diced
