  • 1 teaspoon White wine
  • 1 teaspoon Vinegar
  • 1 cup Rice
  • 2 1/2 cups Water
  • 1 Bay leaf
  • 1 pinch Oregano
  • 1 teaspoon Sugar
  • 1 pinch Black pepper
  • 1 teaspoon Salt
  • 1/2 small Jalapeno, chopped
  • 2 cloves garlic, crushed
  • 1 small Onion, chopped
  • 3 teaspoons Olive oil
  • 1 can 16-oz black beans

Instructions

Step 1

Heat 2 teaspoons olive oil in a heavy pot. Sauté onion, garlic, and jalapeno until tender.

Add salt, black pepper, sugar, oregano, bay leaf, black beans, and water.

Bring the mixture to a boil, then add the rice.

30 minutes

Reduce heat to low and simmer for 30 minutes.

Stir in the vinegar and white wine.

When ready to serve, stir in the remaining 1 teaspoon olive oil.
