It’s the first salad I’ve ever made that has no vinegar, no oil, and not even salt or pepper! Strangely, the salad doesn’t need them and could distract from the intensity of the other flavors.

One of my favorite dine-out dishes is Shrimp Fra Diavolo. I love carbo-loading on this slightly spicy tomato sauce-based pasta dish with sweet, tender shrimp and that this meal that can be put together in less than 30 minutes. It never fails to fill me up and make me happy.

I promise that this is a healthy meal that is way more fun than salad. This stir fry combines tender chicken with carrots, steamed broccoli, crunchy snow peas, cashews, and quinoa with a sweet and salty sauce. I kept my stir fry on the mild side, but you can easily spice things up by adding more sriracha.

We LOVE breakfast at our house. I’m not joking when I say that we have breakfast for dinner at least twice a week. I decided to make a Cheesy Potato Breakfast Casserole. I’m so glad I tried this out because it was BEYOND easy to make and was so delicious!
