Best Healthy Breakfast Burrito

Ingredients

1 tablespoon peanut oil
1 splash cold water
1 spoon chili sauce
1 glug olive oil
1 lime, juiced
3 shallots finely sliced
2 tablespoons balkan yoghurt or sour cream
2 tablespoons prepared salsa

Preparation

First prepare the guacamole, by squashing the avocado in a bowl until reasonably smooth.

Add the cilantro, tomato, chili sauce, olive oil, lime juice and shallots, combine.

Pop the tortillas in the toaster to warm up.

Heat oil in a frying pan on high heat.

Beat eggs with the cold water, add salt and pepper to taste.

Scramble eggs quickly, using a spatula to scrape egg from the bottom of the pan (this should only take a few seconds).

Remove eggs from heat when still slightly liquid.

Remove tortillas from toaster when warm (don't let them start to bubble, once they start to toast they are no longer flexible enough to use as a wrap)

Add egg, guacamole, yoghurt and salsa to tortilla, enjoy warm.
