one whole chicken

corn tortillas

1

pound each of sliced montery jack and cheddar cheeses

1

can each of cream of chicken and cream of mushroom

1

8 ounce can of sliced olives

1

large diced onion

2

chopped carrots

1

teaspoon ea. salt, garlic pwd.,pepper, chili pwd

salsa picante to taste

edit Preparation

Step 1

Boil chicken & spices in about 4 cups of water and save broth.

Step 2

Add cream soups to broth.

Step 3

Debone chicken & combine w/ onion, olives, carrots.

Step 4

Slowly cook above ingredients in broth for approx 30 min.

Step 5

Tear tortillas into quarters & layer a casserole dish with 1/3.

Step 6

Pour 1/3 of the soup mix on top & layer with cheese.

Step 7

Repeat layering process until all ingredients are used.

Step 8

Bake in oven @ 350 degrees for about 45min.

Step 9

Let sit for 30min, salsa to taste & enjoy.

You can vary any of your favorite spices to your taste and use more than one chicken or more cheese if you choose. If you're really brave try some sliced jalapeños as a topper.
