Ingredients

4 mediums cucumbers peeled, and
thinly sliced
2 mediums sweet onions cut thin rings
6 plum tomatoes thinly sliced
1 block mozzarella cheese - (8 oz) cubed
1 1/2 cups Italian dressing
1/4 cup water
1/2 teaspoon salt
1/2 teaspoon freshly-ground black pepper

Preparation

Combine first 4 ingredients in a large bowl. Whisk together dressing and next 4 ingredients; pour over vegetable mixture, tossing to coat. Cover and chill at least 2 hours.
