Ingredients

2 lbs. raw sweet potatoes (yams)
1 gal. water
1 tablespoon salt
1 cup sugar
1/2 cup white Karo syrup
1/4 cup butter
1/2 cup water

Preparation

Preheat oven to 350 degrees. Peel and shred potatoes in gallon of water. Add salt. Drain and wash well. Pour shredded yams in baking dish or shallow pan.

Mix syrup, sugar and 1/2 cup water. Cook until simply syrup. Add butter. Pour pineapple juice over the potatoes then pour the syrup. Cook 35 minutes or until transparent. 12 servings.
