cup sifted plain flour |

cup boiling water |

Step 1 |
Place one cup water in medium size saucepan and bring to boil and butter/butter and allow to melt. Mix in flour and salt, stirring rapidly over low heat until mixture forms a ball. |
Step 2 |
Remove from heat. Add eggs one at a time, while beating well after each. Drop by tablespoons on greased cookie sheet. Bake 20 minutes at 425 degrees. Cool, slick off tops of puffs, fill and put top back on. For cocktail puffs, drop by teaspoon bake as usual and fill with fish or meat filling. |
