Stuffed Cornish Hen

Ingredients
6 rock Cornish hens, approximately 1 lb. 2 oz. each
3 cups cooked white rice or Minute Rice, cooked to =
1 (16 oz.) can mushroom pieces
1 1/2 teaspoons poultry seasoning
1/4 cup minced celery
1 sm. onion, minced
2 eggs, med. sized
Preparation

Thaw hens. Remove giblets and rinse hens in COLD water. Cover and put back in refrigerator. (Feed the giblets to a neighbor's cat or cook them.)

Cook rice to make 3 cups and cool. Add drained mushroom pieces to cooled rice. Add eggs, celery, onion, and poultry seasoning. Mix well.

Bake at 350 degrees for 1 1/2 to 2 hours in a covered, shallow pan with 1/4 stick melted butter.
