Citrus Custard

Ingredients

3 cups low fat milk or soymilk
1 tablespoon grated orange zest
1 teaspoon finely grated lemon or lime zest
cup apple juice concentrate
cup freshly squeezed orange juice

Preparation

Mix some milk with the cornflour to make a paste. Place the remaining milk, zest, apple juice concentrate and cornflour mixture in a saucepan. Slowly simmer until the custard begins to boil and thicken.

Remove from heat and stir in the orange juice (add more or less OJ for a thinner or thicker consistency).
