Cauliflower Cucumber Relish

Ingredients

6 mediums cucumbers, peeled cut and seeded
4 large onions, cut up
1 large cauliflower head, cut up
3 tablespoons pickling salt
3 tablespoons mustard powder
1 teaspoon turmeric
1 teaspoon ground ginger
1/4 teaspoon pepper
2 cups hot water
3 tablespoons pickling spices, tied in double layer cheesecloth

Preparation

Put cucumbers, onions and cauliflower through food grinder. Mix in salt.

Cover and let stand on counter for 3 hours.

Sauce: Stir in first 6 ingredients together in large saucepan.

Mix in hot water. Add vinegar and spice bag.

Heat on medium high heat, stirring often, until it comes to a boil. Boil 10 minutes, stirring occasionally.

Discard spice bag.

Add vegetables to sauce. Stir.

Pour into hot sterilized half pint jars to within 1/ inch of the top.

Place sterilized metal lids on jars and screw metal bands on securely. Process in boiling water bath for 10 minutes.
