Boysenberry Fool

Ingredients

1 pound boysenberries, fresh
1/4 cup water
1/2 cup sugar (caster)
1 cup cream
mint for garnish

Preparation

Set aside a few of the best boysenberries for garnish.

Place boysenberries, water and sugar in a saucepan, cook until they are soft then puree. Allow to cool.

Whip cream and fold into custard with boysenberry puree. Ladle into serving glasses and refrigerate.

To serve, decorate with a rosette of whipped cream and garnish with reserved boysenberries and a sprig of mint.
