Ingredients

pre-baked
pie shell
2 mediums yellow
onions,
sliced
1
stick
unsalted butter
2 teaspoons
all purpose flour
1/2
heavy cream
2
eggs
1 cup
grated
cheddar cheese
salt
and
pepper
to taste
Preparation
1
Melt
butter in saute pan over medium
heat
2
Add onions and
sweat
without
browning
until soft and translucent

Transfer to a medium-sized bowl and
stir
in flour,
cream
and eggs. Gently
fold
in cheese
4
Season
with
salt
and pepper
5
Pour in a pre-baked pie
shell
and
bake
in a 350 pre-heated oven until golden
brown
and set (about 45-60 minutes)
