Sugar-Free Gingerbread Men

Ingredients
3 cups whole-grain wheat flour
1/4 teaspoon salt
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 cup bran
3 teaspoons ground ginger or to taste
1 teaspoon allspice
1 teaspoon ground cinnamon
cup butter
6 tablespoons sugar substitute
2 eggs beaten
3 tablespoons orange juice
2/3 cup unsulphured molasses
Preparation

Heat oven to 350 F. In a large bowl mix flour, salt, baking powder and baking soda, bran and spices together.

In the bowl of a standing mixer with the paddle attachment, beat the butter, eggs, sugar substitute, orange juice and molasses until well combined. Slowly add the flour mixture until incorporated.

Remove dough from bowl and roll out thinly on floured board.

Using a cutter, cut into gingerbread men shapes (or other shapes) and place on buttered cookie sheets.

Bake for 15-20 min or until crisp and lightly browned. Cool on a wire tray and store in an airtight container.

Way too much dry ingredients...had to add almost a cup of molasses. >.<
